Squash

We grown 18 different varieties of squash that are that are available in September and October.  Most varieties are ready to eat when the bottom where they sat on the ground is a nice orange color. Below are photos and descriptions of each variety of squash we grow on the farm.

Spaghetti: The flesh is a dark yellow color.  It is very stringy and a good pasta substitute. They are ready to eat when the outside turns a bright yellow.

Millionaire Spaghetti: The flesh is a dark yellow color.  It is stringy and a good pasta substitute. Millionaire spaghetti has an improved flavor from the traditional spaghetti squash.

Acorn: It has an orange-yellow flesh and a sweet, nutty flavor. Some people eat this squash plain but others add brown sugar or stuff them.

Buttercup: Our most popular variety of squash. Buttercup has an orange flesh that is typically described as sweet and creamy.

Butternut: It has an orange flesh with a sweet, nutty flavor. Butternut squash is not as dry as buttercup squash and is excellent roasted or made into soup.

Sunshine: Is a Kabocha type squash with a smooth orange rind. It has a sweet, nutty flavor similar to buttercup but not as dry. Some use this variety of squash when making pumpkin desserts.

Uchiki Kuri: Is a Japanese variety that is an improved selection of Hubbard squash. It has a smooth orange-red rind and thick creamy yellow flesh that has a very sweet and nutty flavor.

Buttercup: The flesh is dark orange with a smooth texture.  It is generally a little drier than the butternut and is a favorite among our customers.

Sweet Dumpling: It has a light orange to gold flesh. When cooked, it has a smooth-texture with a sweet, mild flavor.

Delicata: It has thin skin and a yellow to orange colored flesh. When cooked, it is sweet, rich, and moist, much like a sweet potato. The skin is very thin on Delicata squash that it is also edible.

Butternut: The flesh is orange, smooth-textured, and has a unique sweet flavor.

Heart of Gold: Is the most similar to Sweet Dumpling squash in shape and color. It is larger than a Sweet Dumpling squash but also has a excellent sweet flavor similar to an acorn.

Jester: Is an oval shaped with green and white stripped skin. It has an excellent sweet flavor similar to Sweet Dumpling squash.

Sweet Lightning: It is perfect for decorating because it looks like a mini pumpkin. It has a smooth flesh with orange and white striped, spotted skin. It has an excellent sweet flavor similar to Sweet Dumpling squash.

Festival: It is shaped like an acorn squash and has a flavor similar to an one, although slightly sweeter. It is also great for decorating.

Celebration: It is shaped like an acorn squash and has a flavor similar to an one, although slightly sweeter. It is also great for decorating.

Baked Potato: It is a type of acorn squash with a sweet, nutty flavor. Baked Potato get its name from its tan color.

Mashed Potato: It is a type of acorn squash with a sweet, nutty flavor. Mashed Potato get its name from its white color. When it is baked and fluffed they look just like mashed potatoes!
