REFRIGERATED PICKLES

  • 3 cups sugar
  • 2 cups white vinegar
  • 2 tablespoons salt
  • 1/2 teaspoons celery seed
  • 2 onions
  • 8 cucumbers
  • 1 pepper (optional)

Wash the cucumbers but do not peel them.

Stir the sugar, white vinegar, salt, and celery seed in a bowl until the sugar and salt dissolve.

Slice the cucumbers and onions very thinly.

Stuff a 3 quart plastic container with the cucumbers and onions. Then add the cool liquid mixture up to the top of the container.

This recipe will make about 3 quarts.  Store in the refrigerator.  Will keep up to 3 months.

Refrigerated Pickles are a Sam family favorite recipe to make with fresh cucumbers.
